Fantastic Crock-pot Veggie Soup Recipe
- 4cups+++ tomato juice(I use almost all of a 64oz container)
- 4cups veggie broth (you could use chicken broth, but I keep it plant-based)
- 1 ½ tsp oregano
- 1 ½ Tbsp basil
- 3 cloves garlic, minced (I use the pre-minced garlic in jars-3tsp)
- ½ tsp herbamare (optional)
- 1 tsp salt (optional…just kidding it’s not, definitely add it)
- ¼ tsp pepper
- 2 medium carrots, sliced
- 2 stalks celery, chopped
- 1 medium onion, diced (I like yellow)
- 1 ½-2 cups chopped potatoes
- 1 15oz can diced tomatoes, undrained
- The following are all 15oz cans, drained and rinsed:
- Corn
- Peas
- Green Beans
- Kidney Beans
Place all ingredients in a crock pot. Cover and cook for 7-8 hours on LOW or until veggies are tender.
- My kids like it topped with freshly grated Parmesan cheese.
- For a more minestrone style soup- add 1 ½ cup cooked pasta shells during the last 5 mins of cooking.
- Can also be drained a bit and served over rice.
- Use organic ingredients whenever possible.
